| History and philosophy of the brewery | Imuraya was founded in 1896 as a confectionery company. We have now embarked on the production of sake, taking over the sake production business of the Fukui Sake brewery in the city of Iga which was founded in 1900. We will continue to brew sake rooted in the Mie terroir, using pure water and high-quality sake rice, nourished by the rich climate of Mie. |
| Production features | Sake is usually brewed during the winter months. Indeed, when it gets hotter, the temperature in the brewery rises, which makes it difficult to produce a quality sake. We set up a mechanised brewing process as well as a temperature and other strict quality control measures, so that we can offer unpasteurized sake throughout the year. |
| Tasting Characteristics | This is the first sake in Imuraya’s 125-year history. The name “Fukuwagura” is a portmanteau word formed by the Japanese word “fuku” (happiness) and “Wazo” the first name of the founder of Imuraya. This sake has an elegant and lively taste, with a noble and mellow aroma like muscat and has a fresh acidity like apple. It is characterised by a fruity, refreshing and savoury taste, i.e., an authentic local product. |
