Manufacturing features This sake is the brewery’s flagship product through which the experience and the senses of the master brewer (called the “Toji”) are respected and where every step of the manufacturing process is carried out with attention to detail, which clearly highlights the character of the brewery.
Specificity
History and philosophy of the brewery Founded in 1793. The motto of the company is as follows: “careful brewing of sake with gratitude for people, rice and water”. The brewery uses only high-quality rice and groundwater from the Kochi Valley.
Production features  This sake is brewed with 50% polished sake “Yamada Nishiki” rice. It is brewed by hand, carefully pressed drop after drop according to a process called “Tobin Dori”, which gives it a rich aroma and a more pronounced taste.
tasting Characteristics A first impression of pears, white peaches, green bananas, and squash aromas. There are also aromas of rice flour, crème fraiche and barley sugar. Sweet in the taste with a roundness to it. An elegant acidity and a light bitterness that harmonise the whole experience.
