History and philosophy of the brewery The brewery was founded at the beginning of the Meiji era (1868-1912). 15 years ago, the fourth generation of brewers took over the business and now focuses on the production of sake “Junmai”.
Production features Sake brewed with JSA 901 yeast using a 60% polished rice from the variety “Kami-no-ho”, a rice produced in the prefecture of Mie. It is fully stored in 1.8 litre bottles and refrigerated, ready for shipment.
Tasting Characteristics Its bouquet is reminiscent of freshly cooked rice. Firm taste, with a lively acidity that harmonises with the umami flavour.
