Specificity
History and philosophy of the brewery Since 1998, the Moriki Sake Brewery has been brewing only “Junmai” sake, a hand-crafted sake made from rice, “koji” yeast and water, without addition of alcohol.
This sake “Junmai” is a pure sake going straight to the point. The sake we produce is exactly the one we want to consume ourselves.
Our goal is to produce a sake with a discreet aroma that can be combined with both cold and hot dishes.
Since we only produce 55,000 litres of sake a year, we make sure that these are worthwhile.
Production features Hand-crafted sake “Junmai” made according to the “Yamahai” method. Its “koji” yeast is made according to the “futa koji” method. Its rice is stretched according to the so-called “Nukake” method before being steamed. No other yeast is added.
Tasting Characteristics This sake is part of the “Tokubetsu Junmai” specific designation for daily consumption. It is also suitable for anyone wishing a real moment of wellness without stress. It goes well with a wide range of dishes.
“Rumiko no sake” is refreshing, and robust.
The label was kindly designed by Akira Ose, author of the manga “Natsuko no sake”. So, we hope that this sake lives up to its label.
It can be enjoyed cold, at room temperature and even hot.
