Manufacturing features Yamada Nishiki rice is 38% polished and washed per 10 kg unit to remove excess bran. This is a small-scale production using all the traditional techniques of Miyanoyuki and a traditional koji.
Specificity
History and philosophy of the brewery When the original brewery was founded in 1846, the city of Kusu, in Mie Prefecture, was originally a thriving sake brewing area, with more than 30 active breweries. Today, we have taken over these buildings for our own brewery activities, totalling an area of 26,400 m2. Some of these buildings have been designated as national cultural heritage properties and all of them are still standing. The brewery still produces sake “Miya no yuki”, shochu (distilled alcohol) “Kinmiya”, “honkaku” shochu, whisky and mirin (seasoning of Japanese cuisine). The name “Miya no yuki” is derived from “miya”, meaning “shrine” as found in the name of Ise Jingu Shrine, and “yuki”, referring to the snow that covers the Suzuka Mountains.
Production features This sake is produced according to the traditional brewing method of the “Nanbu Toji” (Tohoku school). This one uses a pure and traditional “koji” yeast. Sake is fermented slowly and carefully at low temperatures and is characterised by a full aroma, rich sweetness, and light acidity. It has a light and refreshing taste that highlights the velvety rice. The new sake brewery has been in operation since June 2018, combining traditional techniques with the latest brewing technologies to come closer to perfect quality.
Tasting Characteristics A nose full of ripe, sweet, and juicy yellow apples and peaches, with notes of muscat and fragrant olives, and a fresh and striking aroma of green bamboo and Japanese green tea leaves. Its creamy palate gives way to elegant sweetness, refreshing acidity and a hint of bitterness.
