History and philosophy of the brewery | The land of Ise has been known as a rice-producing region since the Heian period (794-1185). It also developed a culture of sake brewing. Since its creation in 1854, the Kankoubai sake brewery has perfected its art of making sake. Our sake is brewed by hand with selected rice and crystal-clear water. Since most of our processes are carried out by hand, we can only brew a limited amount of sake every year. That’s why we put our passion and dreams into every drop of sake we brew. We hope that you will enjoy the taste of our sake, the fruit of Mother Nature and the skill of Mankind. |
Production features | This “Junmai Daiginjo” sake is made by polishing a 40% Yamada Nishiki rice and using all the production techniques we have at our disposal. |
Tasting Characteristics | Magnificent aroma, flavour reminiscent of apples and melons. A well-balanced Junmai Daiginjo with acidity that will go perfectly with all your dishes. |
