Manufacturing features Brewed slowly at low temperature using “Yamada Nishiki”, the rice from Iga (Mie prefecture) best suited for sake. The rice is polished at 35%. We used groundwater from the Asake River, sourced in the Suzuka Mountains.
Specificity
History and philosophy of the brewery Hayakawa Shuzobu Brewery is located in Kawagoe, in the North of Mie Prefecture, at the mouth of the Asake River, flowing from the Suzuka Mountains and into Ise Bay. The brewery was founded in 1873 by Hanzaburo Hayakawa, an Edo-era rice merchant, who started brewing sake in Amakasuga, a town in Yokkaichi where the fishing and shipping industries were flourishing. During the Taisho era, the brewery relocated to its current location, benefiting from rich groundwater from the Asake River. It has thus been more than 100 years that we have been perfecting our brewing know-how.
Production features We use only sake rice from Mie Prefecture and water from the crystal-clear underground stream of the Asake River, which originates in the Suzuka Mountains. Sake brewing is carried out by hand with great care and diligence, to bring out all the flavour of rice.
Tasting Characteristics Its colour is light green with a light crystalline tone. It has a clear and flamboyant ginjo bouquet with notes of apple, pear, and melon. Persistent on the palate with notes of cream and bitter almonds. It has a round sweetness and a moderate acidity that mixes with a full-bodied bitterness.
