Specificity
| History and philosophy of the brewery | The brewery was founded at the beginning of the Meiji era (1868-1912). 15 years ago, the fourth generation of brewers took over the business and now focuses on the production of sake “Junmai”. |
| Production features | Sake brewed with JSA 901 yeast using a 60% polished rice from the variety “Kami-no-ho”, a rice produced in the prefecture of Mie. It is fully stored in 1.8 litre bottles and refrigerated, ready for shipment. |
| Tasting Characteristics | Its bouquet is reminiscent of freshly cooked rice. Firm taste, with a lively acidity that harmonises with the umami flavour. |
