Manufacturing features It is made with yeast from Mie Prefecture and locally produced Yamada Nishiki. It is made at a low temperature, with long-lasting mash and firm koji. The goal was to create a sake with a mild taste and greatly compatible with your dishes.
Specificity
History and philosophy of the brewery The company was founded in 1875 in Nishikio Mura (in present-day Nabari city) in Iga. Since then, we have been brewing rice and sake according to the climate of the geographical basin. We only use a “Yamada Nishiki” rice, grown locally in Iga (some is even harvested in our own fields). IThe brewer (toji) himself is committed to producing a sake that he believes is delicious.
Production features We carefully brew sake on a small scale. We want to keep a balance between tradition and a fashionable phenomenon. We hope to have what it takes to put forward our own ideas of “delights” on a small scale, while keeping a certain distance from what is currently trending.
