Specificity
History and philosophy of the brewery | The brewery was founded by Suzuki Hikozaemon about 150 years ago, in 1867. Since then, seven generations of brewers have succeeded each other. When the brewery was founded, it was called “Suzuki Shuzojo” and produced sake in the name of “Maruhiko Masamune”. The company changed its name to “Maruhiko Shuzo Limited Partnership” in 1928. At the time, there were 8 sake breweries in Kawashima City, but due to several consolidations, we are the last brewery in operation. Our current flagship product is the “Mie no Kanbai”, created in April 1994 by Tetsuo Suzuki, the sixth generation of brewers. He wanted to create a sake that would be appreciated by everyone. The goal we have set ourselves is to create a sake that “spreads in the mouth and melts in the throat”. |
Production features | We want to make as many people as possible aware of the benefits of sake when it is part of our daily diet. To achieve that, we pay special attention to the quality of our sake, which we develop using Yamada Nishiki rice cultivated by farmers in the village of Oyamada in Iga Ueno. The rice is polished to a minimum of 60%, and all the water used in the brewing process comes from groundwater in the Suzuka Mountain range. This water is also used when we clean the rice. |
Tasting Characteristics | Clear crystalline colour, almost colourless to silvery. Opulent and elegant nose, with notes of melon and pear. Soft and mellow palate with a refreshing acidity that tightens the palate leaving a slight bitterness. |
